Galentine’s Day 5-Minute Dark Chocolate

Next week may be Valentine’s Day, but a wise woman coined February 13th, the day before Valentine’s Day as Galentine’s Day which is a day for ladies celebrating ladies After all, behind every confident woman is a strong core of girlfriends who have her back.

I celebrated an early Galentine’s Day by making dark chocolate with my girl Jenna. This chocolate involves only 5 ingredients and one of them is optional. It’s a perfect easy and healthy recipe to make with a girlfriend or group of girlfriends. The best part is there isn’t any actual cooking involved, so it’s pretty hard to mess this one up. If you have a SO, this recipe works well for your partner, too. But we single ladies here gotta stick together. 😉


– ½ cup raw cacao powder
– ½ cup coconut oil
– 2 Tablespoons maple syrup
– Pinch of sea salt
**Optional: Goji berries (good for vitamin C, fiber, iron, vitamin A, zinc, and antioxidants, but let’s be real here, we added them mainly for aesthetic purposes because they’re pink)

1. Melt and pour coconut oil into a bowl.
2. Add raw cacao powder, maple syrup, and sea salt.
3. Whisk together all ingredients until well combined.
4. **Optional: Add goji berries.
5. Line a tray or flat plate with parchment paper and pour mixture over it.
6. Place in refrigerator for a few hours to allow liquid to harden. **Optional: Sprinkle a few more goji berries on top for an extra pop of pink.
7. Very gently, break hardened chocolate chunk into pieces and plate.

Store chocolate in fridge in an airtight container and consume within 3-4 days — but you’ll probably finish it sooner. 😉
